Keeping your knife sharp. ~ The normal wear from using your knife will have negative effects, but understanding knife edges can save you time and keep your knife sharp longer, preventing premature knife deterioration

When your knife is razor sharp a microscopic feather of steel extends from the knifes edge. Keeping the feather in the position shown is the key to a really sharp edge.
Since this feather is very thin it is also delicate and can bend or rust away. Always hone your knife with ceramic or steel rod before each use. Stainless or not keep a light coating of oil on the edge to prevent deterioration due to microscopic rust.
This feather of steel can be felt very carefully with your finger. It might feel slightly rough. Be careful not to cut yourself.
When the edge begins to fold over or roll, you can make it stand up again with a flat or round of steel, followed by a ceramic rod or super smooth stone. Move the sharpener in the direction of the feather.
When the feather is gone, you will need to make a new feather. This happens by using a diamond rod or stone moved in the direction of the feather. Your work will thin the edge until a new feather is created. The edge will feel very rough like a saw. Next use steel and then ceramic or a super smooth stone to remove the roughness. When your done your knife will be sharp.
If your knife edge is really dull or abused, you will need to use a rough diamond flat or rod, or a rough grit stone to repoint the edge. Then do the above steps to make it sharp.
There are many different blade grinds, but they all extend to the edge. Except for the really dull or abused edge follow the angle already present .
On the dull edge you can reshape the edge to an angle of your choice. A steep angle will do better at slicing but will be more delicate. A less steep angle will be better for chopping, and will last longer but will not cut as easily. You can also elect to form different edge angles on different sections of the blade.
